The Desafio dos Chefs program has presented a novel recipe, Massa preta com camarão, framboesa e ervas frescas, which translates to black pasta with shrimp, raspberry, and fresh herbs. This innovative dish was prepared by chef Márcio Ricci, under the guidance of chef Júlio Fernandes. The recipe features black pasta made from squid ink spaghetti, which gives the dish a striking visual presence and an elegant touch.

The preparation of this recipe begins with heating a small amount of olive oil in a large frying pan. A selection of shrimp is set aside with their shells intact, while the rest are cleaned and shelled. The shrimp with shells are seared until they gain color, then seasoned with salt, garlic, and white wine, and left to perfume for a few minutes. Once done, they are removed from the pan and reserved for serving.

In a large pot, water is brought to a boil and seasoned with salt. The squid ink spaghetti is then added and cooked for 9 minutes. After cooking, the pasta is drained, tossed with a small amount of olive oil, and set aside. In the same frying pan used earlier, chopped onion and garlic are sautéed in olive oil, then seasoned with salt and black pepper. The shelled shrimp are added and sautéed, with the pan covered for a minute.

As the dish nears completion, crushed raspberries are added to the pan with the shrimp, along with chopped scallions, parsley, and basil. The mixture is well combined, then removed from heat. The black pasta is arranged on a plate, topped with the shrimp mixture, and finished with the reserved shrimp with shells and whole raspberries.

To complete the dish, it is sprinkled with grated cheese and decorated with flowers. Optionally, a drizzle of pesto can be added. This innovative recipe is a collaboration between RecordTV Cabo Verde and Makro, Sala 13, GOLD Decoration, Infiniton, and Paço Print.
