Hilton Mauritius Resort & Spa has introduced a newly redesigned Kesari, its signature Indian restaurant, marking a new chapter for the dining destination. The restaurant is designed to welcome both resort guests and local diners, offering an authentic Indian dining experience inspired by the diverse culinary traditions of North and South India. Kesari brings together familiar Indian favourites and traditional specialities, celebrating the diversity of India’s regional cuisine.

The restaurant's redesign is led by Restaurant Manager Praveen, who expressed delight in unveiling the next chapter of Kesari. The vision is to bring together the richness of Indian culinary traditions with a fresh, contemporary setting, creating an elevated dining experience that appeals to both resort guests and the local community. This vision aims to provide a unique experience for diners.

Under the guidance of Chef Basu, Kesari’s menu takes guests on a journey through the flavours of India, featuring tandoor specialties, aromatic curries, seafood, vegetarian dishes, breads, and traditional desserts. Notable dishes include Tandoori Tiger Prawns, Tandoori Lamb Chops, Chicken Makhani, Paneer Makhani, and Dum Biryani, as well as local touches such as Babonne Fish Curry and Coconut Prawns Curry.

Chef Basu's inspiration comes from India’s rich culinary heritage and the diversity of its regional flavours. His passion is to bring these authentic tastes to guests while adding a modern touch to create a memorable dining experience. This approach ensures that diners experience the best of Indian cuisine.

The redesigned Kesari features a warmer, more contemporary feel, combining natural materials, rich textures, and subtle Indian-inspired details. The space is characterised by a palette of natural tones complemented by touches of aqua, green, and yellow. Woven rugs, rattan and wicker furniture, and patterned fabrics add warmth and character to the space.

The restaurant's ambiance is enhanced by warm, dimmable lighting, creating an intimate evening atmosphere. Bronze and green accents, honey-toned rattan pendants, and traditional lanterns add to the sense of warmth. The result is a relaxed and inviting setting that blends contemporary design with subtle references to Indian heritage.

With 58 seats, Kesari offers an intimate dining experience within the resort, welcoming guests for relaxed dinners centred around warm hospitality and a sense of discovery. The restaurant is now open, offering guests a chance to experience the reimagined Kesari and its culinary delights.
