The Stir-Fried Vegetables require 1 tbs of olive oil, 1 tsp of finely chopped garlic, 1 tbs of finely chopped ginger, 10 baby corn, 1 small red capsicum, 1 medium carrot, and 1½ cups of finely shredded cabbage. The oil is heated in a pan or wok, and the garlic and ginger are swirled in the oil for a few seconds. The vegetables are then added and stir-fried for 3 minutes.
The Mint and Coconut Chutney requires 1 cup of fresh mint leaves, ½ cup of fresh coconut, 2-3 green chillies, 1 small garlic clove, ¼ cup of water, ½ cup of vegan sour milk yoghurt, and ½ tsp of salt. The coconut, mint leaves, chillies, and garlic are ground to a smooth paste using a spice grinder. The vegan yoghurt and salt are then added.
To assemble the Dosa Wraps, a lettuce leaf is placed in the centre of the dosa. A little potato filling, some stir-fried vegetables, and some of the mint and coconut chutney are added. One end of the dosa is folded over the filling, and it is rolled up tightly. The Dosa Wraps can be served with additional chutney.
