La Petite Brasserie, located in the Isoraka neighborhood, opened its doors in December 2020, offering a warm and inviting atmosphere reminiscent of a classic brasserie. Under the guidance of Chef Richard, the restaurant serves simple, traditional, and rustic cuisine. With a passion for cooking instilled by his father, a former restaurant director, Chef Richard has climbed the culinary ladder, graduating from the Institut National du Tourisme et de l'Hôtellerie (INTH) in 1999.
Chef Richard's culinary journey began with internships at various restaurants in Madagascar, including Majunga and Toamasina. He then worked at the Miramara Hôtel in Toamasina, starting as a dishwasher and eventually becoming a chef. In 2008, he became the second chef de cuisine. Chef Richard's experience extends to Tuléar, where he worked in several establishments, and in Tana, where he spent six years in the kitchens of Shalimar.
At La Petite Brasserie, Chef Richard showcases his traditional yet gastronomic style, which also incorporates Indian, Asian, and French influences. His favorite dishes include magret and duck leg, often prepared with butter, a staple in his cooking. The chef's signature dish, Henakisoa sy vorona, a combination of pork and poultry, is a customer favorite. When not serving traditional Malagasy cuisine, Chef Richard enjoys preparing a good cassoulet.
Chef Richard's beverage of choice is wine, enjoyed in moderation. His menu changes daily, offering a new selection of dishes, including an entrée, two main courses, and a dessert, all at affordable prices. To create his dishes, Chef Richard draws inspiration from traditional cuisine, adapting to local ingredients and prioritizing Malagasy products to support the local community.
Currently, La Petite Brasserie is open for business, with a service that runs continuously from 11 am to 11 pm, seven days a week. The restaurant also features a piano bar on its mezzanine level, which comes alive on Thursdays, Fridays, and Saturdays. In addition to its regular offerings, La Petite Brasserie is working on expanding its menu to include vegetarian options.
One of Chef Richard's signature recipes is his grilled fish dish, served on a bed of leek fondue, degglaced with white wine, and accompanied by small vegetables. The dish is made with marinated fish fillet, cooked in a pan and served with a side of sautéed vegetables. This and other recipes are available at La Petite Brasserie, where Chef Richard and his team are dedicated to providing an exceptional dining experience.
As La Petite Brasserie continues to establish itself, Chef Richard remains committed to his culinary vision, which emphasizes traditional Malagasy cuisine with a modern twist. With its cozy atmosphere and delicious dishes, La Petite Brasserie is quickly becoming a go-to destination for foodies in Madagascar.
